Nutritional Values of Biscuits and Kachari with Varying Concentrations of Germinated Wheat Flour, Pearl Millet Flour and Mung Beans Flour

Cluster fig, goolar in hindi, is a medicinal fruit, widely found India. It rich source of iron and other micronutrients. Wheat staple food Indian diet which an energy dense food. good carbohydrate & protein. Pearl Millet most grown type millet. known for its calorie value; vitamins minerals present it. Mung bean belongs to the family legumes has high it also very protein poly-unsaturated fatty acid. For this study cluster fig powder, germinated wheat flour, mung pearl millet, carrot powder beetroot have been used. The product development was done using above-mentioned ingredients. Two products with three treatments varying quantity ingredients used development. developed undergone sensory proximate analysis. Each treatment different replications minimise error during evaluation nutritional assessment replications.
 organoleptic highlight that taste becomes bitter acceptability decrease with. Increased fig. analysis concludes increase zinc content increase. This shed light on nutritive properties provides idea how much should be various processed convenience healthy research aims at highlighting use available India but never make convenience.
